It's called 'sour' because traditionally they used the leftover milk or yogurt that had gone sour. Tis giagias (=grandma's) Sur Trachanas is made in Tripoli, Pelopponese, and is prepared according to a traditional recipe that has been passed down from generation to generation since 1967. Trachanas or Trahanas or Tarhanas are cooked as a thick soup. To cook, add salt and butter to boiling water or milk, add pasta, stir occasionally and cook for 20 minutes. Serve with feta cheese on top for a delicious meal.
