Lemon sole is something of a misnomer as it does not taste of lemon, nor is it a sole; it is actually a flounder from the same family as halibut and turbot. It gets its name from its pale yellow colour. Our Lemon Sole fillets range from 200g to 250g and come with their skin on and pin bone in place, which helps retain flavour and keep the delicate flesh together during the cooking process. The light texture and flavour of lemon sole fillet calls for a simple cooking process, served simply with butter or lemon juice.
