Fresh Boneless Scottish Salmon. Filleted and pinboned in store. Our suppliers only use trusted salmon farms from Scotland, Shetlands and the Faroe Isles and we only used the best ‘supreme’ graded salmon. We buy whole salmon weighing between 5-7kg, to ensure a good thickness to the fillet. We fillet and pinbone the salmon, ensuring all the fat around the belly is trimmed off, then the fillets are cut to size. Stall price for Salmon fillet is £27.95 per kilo
