Dried chickpeas should be soaked in water before use. Cover the chickpeas with water. Leave to soak for 8-10 hours or overnight. After the chickpeas have soaked, drain the remaining water. Rinse them in a sieve or colander. Place the chickpeas in a pot and cover with water. You can add an onion and some bay leaves to the water. It adds great flavor to the chickpeas. Bring the pot to the boil and turn down to low/medium heat and simmer the chickpeas for about 1 hour. Once cooked, drain the water and they are ready to be used in various dishes and recipes with chickpeas.
